Oatmeal
The beautiful thing about oatmeal is that it’s completely customizable so pretty much anyone will enjoy it. If you want to go really minimal, you can just heat up some water on your stove and pour it into a bowl with already flavored instant oatmeal. Or you can bring some quick oats and add some fresh ingredients. Our families favorite is:
- Quick Oats
- Peanut butter
- Chocolate chips
- Mashed banana
- Shelf stable milk
If you want to make it a little more filling, throw in some flax seed, chia seeds, or protein powder to bulk it up a little.
Pancakes
Pancakes are another one of my favorite easy camp breakfasts that doesn’t need refrigeration. Or you can doctor them up to make them really delicious. You can just grab a box pancake mix, pack that in your food bin, and add water when you get to camp. I love to add an egg and milk to our pancake mix but if you don’t have those times, water works great.
If you choose to make pancakes, don’t forget to bring some kind of oil or fat to put on your pan to keep them from sticking!
Adding things like blueberries, banana, or chocolate chips to the pancakes is always delicious, and then use whatever you prefer for the toppings: Syrup, peanut butter, apple sauce, jam, honey, or fresh fruit. The options are endless!
Muffins
This one will take a little prep work at home but is worth it for a super simple breakfast at camp! Muffins are a great grab and go breakfast. We love to bring them for the mornings when we want to get to a trail early to beat the crowds. I look for muffin recipes that have filling ingredients like flax seeds or oats.
These are also great to have with a piece of fresh fruit on the side or peanut butter spread on top. *If you do this, break the off muffin bottom and put it on top so it sandwiches the peanut butter in between. This will help keep the mess down!
Cereal
This is going to be a crowd pleaser for the kids I’m sure, but cereal can be a great option especially if you have more picky eaters. To make this a more filling meal, make sure to look for is cereals with less sugar and high quality ingredients. Granola with milk is also a great option! Here are some of our favorites:
- Grape Nut Flakes
- Muesli
- Pumpkin Seed Granola (We get this at Costco for a much better price)
- Homemade granola
For milk, you can either use a powdered milk and just add water. This is the best tasting powdered milk in my opinion. Or you can use a shelf stable milk which works great as well. It is a little more expensive however.
Adding fresh fruit like bananas or peaches to cereal is also an easy way to bulk up your cereal and add some sweetness.
Avocado Toast
If you have never tried avocado toast, you might be missing out on the most delicious breakfast food. It’s also a good option for little ones because of the high, healthy fat content from the avocado.
To toast your bread, you can either pan fry it with a little butter on each side or you can grab this handy toaster gadget to put right on top of your burner.
In a separate bowl, add your avocado–I prefer 1/2 an avocado per slice of toast. Mash it up and add a little salt. Once the toast is done, spread the avocado on top and eat as is. You can also top it with a little honey or siracha. If you happen to have refrigeration, a fried egg and cottage cheese are also delicious on top.
